Harvesting the best

If you want the best wine you have to be intentional about your vines and your terroir. You have to know your soil, your grapes, your aspect and your microclimate.

You have to tend your vines, weed and prune. Judging which buds to leave and which to remove so that the best have the opportunity of being their best.

And you have to wait. Wait for the grapes to fully ripen, yes fully. Wait maybe beyond where you thought you would be harvesting. Because there is a best time to harvest, and it’s a judgement…

But you have to harvest. You have to actually pick the grapes if you’re going to make the best wines.
